Tonight's Dinner

So, here it is... I disappeared for a bit and am about to go on vacation next week! So, for now I will just give y'all a recipe that I love. Cheap, fairly healthy, vegetarian and yummy as hell.

Taco Pie w/ Crescent Roll Crust

Ingredients
2 cans of Red Kidney Beans, drained
2 cans of Black Beans, drained
1 can of diced tomato with chilies, drained
Small onion, chopped
small green pepper, chopped
minced garlic
1 small jar of chunky salsa
2 cans of refrigerated crescent rolls
shredded cheddar cheese
sour cream
black olives

Saute the onion, green pepper and garlic until cooked through. Add all of the beans, the tomatoes and the salsa. Don't use too much salsa as you do not want the mix to be too wet. Stir together and let heat through.

Meanwhile, pop open your crescent rolls. Make sure to spray your baking pan with cooking spray. If you can find the sheets of crescent dough, those work fabulous! Otherwise, just spread the dough out flat in a baking pan and press together. Make sure your dough goes up the sides to form a crust. If you are using a big pan, you will need more dough. I usually buy three cans and whatever does not go in the crust I cook up to eat for breakfast or a snack.

Once the dough is spread, spoon the bean mixture onto it. Then, top this with shredded cheddar cheese, just a thin layer over the top. Bake this at 375 degrees for about 10 - 12 minutes or until the crust is done and the cheese is browned on top.

Serve a piece of the pie with extra cheese, sour cream and some black olives on top for a great meal! You can also serve some shredded lettuce with this or even add corn to the bean mix if you like that.

My God that sounds good!!! I'll have to print this out and try it. Sounds like a good quick meal for watching a movie or some type of sports. YUMMY!
